I was going to kick off this "comeback" with a soup but had to change plans after a tropical heat wave surprisingly decided to come visit in the end of September. An ice cold smoothie seemed to be the right way, well the only way, to go. This nutritious protein rich smoothie is perfect for a quick breakfast, a mid-morning/mid-afternoon snack and even as dessert. Make a batch and bring in a bottle to drink after a workout or serve it to your children instead of ice-cream.
Protein Rich Berry Smoothie
200ml/2dl greek yoghurt
200ml/2dl frozen berries of your choice
1tbsp milled flaxseeds
2 or more ice cubes (optional)
Mix it all together in a blender or food processor. Pour in a glass of your choice and garnish with some fresh mint to satisfy the eye. Serve ice cold.
