Detox Salad

The seasons are still changing. The biting cold seems to never end. The birds singing in the early mornings, the flowers that grow in the parks, and the sun that keeps the days longer all shows sign of spring being on its way. Stay focused on lighter meals now and let your body change and lighten as we approach the new season. This Detox Salad will encourage the elimination of toxins and provide you with vital nutrients to boost up your energy.

Detox Salad
2-3 handfuls of leafy greens (spinach, swiss chard, lettuce, collard greens etc.)
4 stalks celery
1/2 cucumber
1 handful of parsley
1tbsp pumpkin seeds

Wash the vegetables thoroughly. Tear the leafy greens apart with your hands. Chop up the celery and cucumber. Toss everything together in a big bowl and top with the pumpkin seeds. Drizzle with some olive oil and a dash of lemon juice (optional). Serves 1
HEALTH BENEFITS: As mentioned above this salad will help you detox and have a diuretic effect by flushing out toxins and stubborn sluggish that are stuck in your system. The liver, kidneys, lungs, bowels and the skin are your main detoxification organs. It is vital to keep these organs function in an optimal way. The best way to do this is to eat lots of vegetables, fruits, whole grains, and beans to get a lot of fibre, drink at least 2 litres of water each day including herbal teas (nettle and dandelion are killers and my absolute favourites), include fresh herbs such as parsley, and get your body moving EVERY DAY. Forget about red and processed meats, refined foods, and an excess of alcohol. These will only clog up and build up toxins in your system, promote weight gain and make you look older quicker.

Gluten Free Vanilla, Almond & Pumpkin Bars

The most fun about cooking for me is to turn something unhealthy into something healthy, delicious and healthy. These flap jacks or bars are quite small in size but filling. This is due to the foundation of ground almonds. If you want these sweeter or less sweet, play with the amount of dates. My husband loves these and hopefully so will you. 

Gluten Free Vanilla, Almond & Pumpkin Bars
1dl/100ml almonds
8 dried dates
0.5dl/50ml pumpkin seeds
1/2tsp vanilla extract
2 egg whites, whisked
  • Preheat the oven to 175ºC/350ºF.
  • Ground the almonds in a food processor and transfer to a bowl.
  • Finely chop the dates in the same food processor.
  • Combine the almonds, dates, pumpkin seeds and vanilla extract.
  • Add the whisked egg whites into the mixture.
  • Transfer the blend to a baking sheet and form a 14cm/5.5inch square.
  • Bake in the oven for 10min.
  • Take out and cut into 10pcs, 1 cut horizontal and 4 vertical, and separate them slightly from each other.
  • Bake for an additional 5-10min
