Almookie the Almond Cookie

The name of these cookies was invented when I in all my excitement accidentally called almond cookie Almookie. These sweet cookies are loaded with nutrition from the sweet almonds and works very well as a snack, light desert or why not as a homemade gift wrapped up in an old vintage cookie jar or a cellophane bag with a lace band. Let your creative side loose. I am always excited about the end result of anything new that I make in the kitchen. With these cookies, or Almookies, I scored on the first try. When you see the ingredient list you will understand why.

Almookie the Almond Cookie
200g un-blanched almonds
2 egg whites
2 tbsp agave nectar

Preheat the oven to 175ºC/350ºF. Place the almonds in a food processor and process into a slightly ruff flour texture. Transfer to a medium sized bowl and add the agave nectar. In a second bowl. Whisk the egg whites until you get a thick white foam and gently add to the almond and agave nectar mix. Use a table spoon or a spoon of your choice to form the cookies on a lined baking tray. Top each and everyone with an almond and bake in the oven for no more than 15 minutes. Remember that if you decide to make them smaller you need to cut the time in the oven. Voila, you made Almookies! Makes about 12

This recipe can easily be doubled and if you plan to store up keep them in the refrigerator to keep the good fats in the almonds intact.
